Chewy Chocolate Hazelnut Cookies |

A delicious special occasion cookie that will disappear quickly. These are VERY chocolaty! Ingredients:
1 1/4 cups butter, softened |
1/3 cup vegetable oil |
1 1/4 cups brown sugar |
1 1/4 cups granulated sugar |
2 large eggs |
2 1/2 teaspoons vanilla |
1 3/4 cups all-purpose flour |
3/4 cup whole wheat flour |
1 cup cocoa (i prefer dutch-process) |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
2 1/2 cups hazelnuts, toasted and coarsely chopped |
Directions:
1. In mixing bowl, cream butter, oil and sugars until light and fluffy (about 2 minutes). 2. Beat in eggs and vanilla. 3. In separate bowl, combine flours, cocoa, baking soda and salt. 4. Gradually blend into creamed mixture. 5. Stir in hazelnuts. 6. Drop by tablespoons onto ungreased baking sheet. 7. Bake in 350°F oven for 8-9 minutes. 8. Do not over bake; cookies will be soft. 9. Cool slightly before removing from sheet. |
