We love apples here at this house. I found this recipe in Parent and Child Magazine. I had to alter it alittle, which I show below but it was really good. So I thought I would share.
Ingredients:
5 tablespoons butter, softened, plus extra for the pan
2/3 cup packed brown sugar
1 large egg, or 2 small ones
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
2/3 cup white flour
2/3 cup wheat flour
1/4 cup 2% milk, or apple juice, or even orange juice
1/2 cup dried cranberries, i used dried cherries as that is what i had
1/2 cup dried apricots, finely diced, i did not have these so i used dried bananas that i crush up well
1 large apple, peeled and diced, i did not peel it as i like the color and extra fiber
Directions:
1. Preheat oven to 350 F.
2. Butter and flour a 9 by 9 inch pan.
3. In a medium bowl cream together the butter and brown sugar.
4. When light and fluffy add the egg(s) and milk.
5. Mix well.
6. Next add the spices and baking soda.
7. Mix weell again.
8. Add the flours.
9. Mix until just combined.
10. Stir in the fresh and dried fruits.
11. Spread batter into the pan.
12. Bake 25 to 30 minutes.
13. Cool before cutting.
14. Makes 25 squares.
15. TIP: Boost the fiber in cookie, cake, and bar recipes by substituting whole-wheat flour for half of the white flour.
16. If serving them warm use whipped topping, yummmm.
