This is a very rich treat. It's so easy to change the recipe up by just changing the flavor of the cake mix. You can add different complementing flavors to filling as well. It's a very versatile recipe. Ingredients:
1 (18 ounce) box yellow cake mix |
1 egg |
1/2 cup melted butter |
1/2 cup grated coconut |
1/2 cup finely chopped pecans |
1 lb confectioners' sugar |
1 (8 ounce) package cream cheese |
2 eggs |
Directions:
1. Preheat oven to 350*. 2. For the crust: Mix together first 5 ingredients with a fork. 3. Press into the bottom of a 9 X 13 inch dish. 4. For the filling: Mix together eggs and cream cheese until smooth. 5. Add in confectioners sugar. 6. Spread over crust mixture. 7. Bake for 30 minutes. 8. Leave a little wet in the center and be careful not to over bake this. 9. Let cool and cut into squares. 10. For best results, store in the refrigerator. |
