I let my zucchini garden go wild and ended up with so much zucchini , not only did I give a lot away, I ended up with a new Zucchini Surprise every night. This one is my favorite, I hope you enjoy. Ingredients:
4 tbsp. butter |
3 medium zucchini, halved lengthwise, and cut into 1/4 slices |
1 small onion, chopped |
1 can diced tomatoes, juice included |
1 can whole kernel corn, drained |
1/4 cup ripe olives, quarted |
salt to taste |
1 cup shredded colby jack cheese |
Directions:
1. In a large fry pan over medium-high heat. Melt butter in pan. 2. Add zucchini and onion and saute till the onion is translucent, stirring frequently. 3. Add diced tomatoes; reduce heat to medium and cook for 15 minutes. Zucchini should be completely cooked by now. 4. Add corn, olives, and salt to taste. Stir well. Heat through. 5. Top with cheese, let melt. Serve |
