This is my favorite cookie to make- and of course, to eat. I do something special to make and keep these cookies moist, it's something my Grandma taught me. Also...it's a 'good for you' cookie! Ingredients:
1/2 cup raisins |
3/4 cup water |
1 cup butter, softened |
1 cup sugar |
1 cup firmly packed brown sugar |
2 eggs |
1 tsp. vanilla |
2 cups flour |
1 tsp. baking soda |
1 tsp. salt |
2 tsp. apple pie spice |
3 cups quick cooking oats |
1 cup chopped walnuts |
Directions:
1. In a small saucepan, pour in water and add raisins. Bring to a boil and remove from heat. Drain raisins, reserving 6 Tbsp. juice from raisins. Set aside and cool. 2. In a large bowl, cream together butter, and both sugars. Beat in eggs and vanilla. 3. In another bowl, combine flour, salt and apple pie spice. Stir baking soda into reserved raisin juice; add to creamed mixture. Stir flour mixture into creamed mixture. Stir in oats, walnuts and raisins. Cover and chill for at least 1 hour. 4. Preheat oven to 350*. Grease cookie sheets. Drop dough by tablespoonfuls onto cookie sheets and place 2 apart. Bake for 10 minutes. Allow cookies to cool on cookie sheets 5 minutes before transferring to wire racks to completely cool. |
