This is great with a touch of tangy cherries! From Recipe Club on the Net. Ingredients:
2 eggs |
3/4 c. granulated sugar |
1/3 c. vegetable oil |
1/3 c. lemon juice |
1/4 c. water |
2 c. all-purpose flour |
2 tsp. baking powder |
1 tsp. ground cinnamon |
1/2 tsp. baking soda |
1/4 tsp. salt |
2/3 c. shredded unpeeled zucchini |
2/3 c. dried tart cherries |
1 tbs. grated lemon peel |
Directions:
1. Put eggs in large mixing bowl. 2. Beat with an electric mixer on medium speed 3 to 4 minutes 3. or until eggs are thick and lemon colored. 4. Add sugar, oil, lemon juice and water; mix well. 5. Combine flour, baking powder, cinnamon, baking soda and salt. 6. Add flour mixture to egg mixture; mix well. 7. Stir in zucchini, cherries and lemon peel. 8. Grease and flour bottom of 8 1/2 x 4 1/2-inch loaf pan. 9. Pour batter into prepared pan. 10. Bake in preheated 350 degree F oven 55 to 65 minutes 11. or until wooden pick inserted in center comes out clean. 12. Let cool in pan on wire rack 10 minutes. 13. Loosen edges with a metal spatula. 14. Remove from pan. 15. Let cool completely. 16. Wrap tightly in plastic wrap and store in refrigerator. |
