This is a cookie my Mom always made at Christmas. It looks festive and tastes heavenly. It comes from the second pillsbury bake off with a few tiny alterations. Ingredients:
3/4 cp soft butter |
1 cp sugar |
2 eggs |
2 tbs orange juice concentrate |
1tsp vanilla |
2 cps flour |
1 tsp baking powder |
1/2 tsp baking soda |
1/4 tsp salt |
1 cp chopped pecans |
1/3 cp chopped maraschino cherries |
3 cps crushed cornflakes |
30 maraschino cherries halved |
Directions:
1. 1Preheat oven to 375 degrees 2. In large bowl combine butter and sugar 3. beat until fluffy 4. add eggs, orange juice and vanilla: 5. beat well to combine 6. add dry ingredients and mix well 7. stir in peacans and 1/3 cp cherries 8. cover dough and refrigerate for 2 to 4 hours 9. Shape dough into balls using a level tbs of dough 10. roll each ball in crushed cornflakes and plsce on parchment lined cookie sheets 11. top each cookie with 1/2 cherry 12. Bake at 375 fo 9-12 minutes untill light golden brown 13. let cool on cookie sheet for 4-5 minutes 14. remove to wire racks to cool completly 15. makes about 60 cookies 16. These are so good you will probably want to make more. They go fast. |
