Cherry Tomatoes With Rum

This dish must be tasted to be believed. A great little hor d'oeuvre
Ingredients:
1 pint cherry tomatoes
2 tablespoons butter
2 tablespoons brown sugar
3 tablespoons light rum (dark is ok)
1 teaspoon crushed basil
salt
pepper
3 tablespoons chopped parsley
Directions:
1. Melt butter over medium heat in heavy frying pan.
2. Blend in brown sugar
3. Add cherry tomatoes and poach in this sauce for about 5 minutes.
4. Be careful not to break the skins.
5. Add rum and basil.
6. Cook an additional 2 to 3 minutes to heat thru
7. Pour all into hot vegetable dish
8. Sprinkle with chopped parsley and serve immediately.
