Now that we're in grilling season I like to have a simple appetizer or salad like this one, its great out doors and in. I've used feta with this before and it was good as well! Ingredients:
dressing |
1/2 cup crumbled blue cheese |
1/2 cup buttermilk |
2 tbsp evoo |
2 tbsp lemon juice |
salt and pepper |
fresh chives, minced |
2 pints yellow cherry tomatoes, and red grape tomatoes |

Directions:
1. Place blue cheese, buttermilk, and evoo in a medium bowl and stir to combine with a fork, mashing up the cheese just a little, season with lemon juice, salt, pepper, and chives, set aside. 2. Wash the tomatoes and pat dry. 3. Slice each tomato in half (sometimes I’ll only halve the cherry ones and the grape ones whole), season with salt. 4. Add the tomatoes to the dressing and toss to combine garnish with fresh pepper. |
