30 cherry tomatoes |
8 oz. of heart palms |
1 lemon |
2 tbs tarragon vinegar |
3 tbs olive oil |
6 scallions, chopped |
2 tbs chopped parsley |
black pepper to season |
Directions:
1. Wash and dry 30 cherry tomatoes 2. Cut off slice from bottom 3. Remove seeds and pulp 4. Drain and refrigerate 5. Place heart of palms in in food processor and chop coarsely 6. Combine juice of 1/2 lemon, vinegar, palms, scallions, olive oil, and parsley, and pepper. 7. Stuff tomatoes and chill |
