The recipe is called Bordelaise because it is made from traditional flavors from that area. In this recipe the tomatoes are meant to be heated through, but not bursting. Ingredients:
1 quart cherry tomatoes |
salt & freshly ground black pepper |
2 tablespoons butter |
1 tablespoon shallot, minced |
1 tablespoon fresh parsley, chopped |
Directions:
1. Rinse and drain tomatoes. 2. Heat butter in a large skillet until hot, but do not brown. Add tomatoes, season with salt and pepper. Cook, shaking pan, to the tomatoes cook evenly without bursting. This will take about 2 minutes. 3. Add shallots and parsley and cook, still shaking pan, about 15 seconds. |
