Cherry Tomatoe Basil And Feta Salad |

The Perfect Summer Side...to Any Meal, Especially Lobster Hoagies! Please Excuse the Cellphone Pic...Lol! Ingredients:
4 cups of red and yellow cherry tomatoes, halved |
1/2 cup od minced scallions |
1/2 cup of fresh basil, thinly sliced |
2 1/2 tablespoons extra virgin olive oil |
1 tablespoon balsamic vinegar |
1 clove of fresh crushed garlic |
kosher salt and freshly ground black pepper to taste |
3/4 cup crumbled feta cheese |
1 tablespoon capers drained |
Directions:
1. Put the Tomatoes, Scallions and Basil in a Large Bowl and Toss. 2. In A Small Bowl, Whisk Together 2 Tablespoons of the Olive Oil, The Vinegar, Garlic and the Salt and Pepper to Taste. Pour Over The Tomatoe Mixture and Toss. 3. Place the Tomatoe Mixture in a Shallow Serving Bowl or On A Platter. Top with the Crumbled feta Cheese and Sprinkle with the Capers. 4. Drizzle with the Remaining Olive Oil and Add A Bit More of the Cracked Pepper If Desired and Serve. 5. Note: This is A Beautiful Dish for A Wedding Reception! |
