At one of my 2nd daughter shin-digs her Mother-In-Law brought these. They were great! So here they are for the whole group to enjoy, with her permission of course! Ingredients:
as many cherry tomatoes as you want to serve |
eggs |
sausage |
onion, finely chopped |
cheese, your favorite |
the amount of each depends on how many tomatoes you are wanting to serve. |
for each dozen tomatoes i use about 4 eggs, 1/4 pound of sausage, and an 1/8 of an onion, and i put lots of cheese on/in this as i am a cheese freak |
i also suppose if you wanted to use very finely chopped up ham or bacon bits in this instead of sausage you could. |
Directions:
1. Cook the sausage and finely chopped onion until well done and very fine, no large coarse bits. 2. Scramble the eggs very light and fine, seasoned as you like, but I omit the salt with the sausage in the mix. 3. Add the sausage to the eggs and mix well. 4. Cheese to follow suit! 5. You will need a very sharp knife or one of those tomato end removers that you can get from a restaurant supply store. This is what I use. 6. Scoop out the end of the tomato and hollow it out. So now you have cherry tomato shells. 7. Fill these shells with the egg / sausage / cheese mixture. 8. Top with fresh grated cheese. 9. Serve right away!!!! |
