From Asparagus to Zucchini, A guide to Cooking Farm Fresh Seasonal Produce. Ingredients:
1 pint cherry tomatoes |
1 small cucumber |
1/4 cup rice wine vinegar |
1 pinch sugar |
salt |
1 tablespoon minced cilantro |
Directions:
1. Cut cucumber in half, quarter the halves and slice. Stem the cherry tomatoes and slice in half. 2. Combine all ingredients in a bowl and let stand at room temperature, stirring occasionally, for 20 minutes or so. Serve at room temperature. |
