This rich dessert is the perfect finale after a light meal. And it's so easy to make! YUM, enjoy as I know you will. Ingredients:
1 cup ricotta cheese |
1 cup confectioners sugar |
1/4 cup sour cream |
1/4 cup coffee liqueur |
30 two-inch shortbread cookies, crumbed (about 11/2 cups) |
1 twenty-one ounce can cherry pie filling (add some almond flavoring for better taste) |
sweet chocolate squares, grated for garnish |
cool whip |
fresh mint, for garnish |
Directions:
1. In a large mixing bowl, combine ricotta cheese, confectioners' sugar, sour cream and coffee liqueur; mix well. Set aside. 2. In an electric blender or food processor, process the cookies in small batches until finely crushed. 3. Remove 6 cherries from cherry filling; reserve for garnish. 4. To assemble dessert, spoon 2 tablespoons ricotta cheese mixture into each of six (8-ounce) parfait glasses. Add 2 tablespoons cookie crumbs to each glass; top each with 2 tablespoons cherry filling. Repeat ricotta, crumb and cherry layers. Finish each serving with an equal portion of the remaining ricotta cheese mixture. 5. Garnish with a dollop Cool Whip a reserved cherries on top of that, and grated chocolate with mint leaves, if desired. Let chill 2 to 3 hours before serving. |
