SUMMER ONLY! Good for appetizer or a meal paired w/ bread and a salad. Adjust servings and times as need to your needs. Ingredients:
cherry tomatoes, summer only, amt needed per serving |
s&p, i prefer crazy janes mixed up salt |
main salad stuffing of your choice; chicken, turkey, ham, tuna, salmon, lobster, egg |
various fresh herbs |
note: different from my large stuffed salad tomato recipe, i do not recommend store bought salads for these. they tend to be too chunky, unless you really like chopping. i use canned meats/seafoods, they process finer for the cherry tomatoes. |
Directions:
1. Slightly open each tomato w/ a fine paring knife, squeeze out pulp and seeds genlty, make a few slits about 1/8 way down. Turn upside down onto a paper plate to drain. 2. When salads are ready for stuffing, turn tomatoes rightside up, Season w/S&P, on or around beds of lettuce. 3. Stuff W/ desired amt of salad stuffing. 4. Garnish w/ herbs. |
