The cherry itself seems to be sweet . So cut back on sugar . Ingredients:
600 g red pie cherry filling |
300 g plain flour |
100 g caster sugar |
150 g butter , room temperature |
1/2 tsp baking soda |
1/2 tsp baking powder |
150 ml low fat evaporated milk mixed with 1 tbsps lemon juice |
1 l egg |
50 g blanched almonds |
Directions:
1. Pre heat oven to 180 degrees 2. Combine flour and sugar . Add the butter and mix with food processor until it is crumbly . 3. Keep aside one third of it as crumbs . 4. Add the baking pwd and soda to the two thirds . 5. Add the egg to the milk and beat well . 6. Add to the flour . 7. Stir until wet . 8. Spread most of it into a greased 22 inch springform pan . 9. Spread the pie filling . Drop the remaining batter in small spoonfuls . 10. Add almonds to the crumb mixture and spinkle evenly over the cake . 11. Bake for 55 to 60 mins . |
