3 tablespoons balsamic vinegar |
1 tablespoon maple syrup or sugar |
3/4 cup dry red wine |
1/4 cup shallot, minced |
1/2 teaspoon cinnamon |
1/2 teaspoon dried rosemary |
1 cup chicken broth |
2 cups cherry, pitted |
2 teaspoons fresh lime juice |
1 pound pork tenderloin |
Directions:
1. In a heavy saucepan boil the vinegar with the maple syrup over moderate heat until the mixture is reduced to a glaze. Add the wine, shallot, rosemary and the cinnamon and boil the mixture until it is reduced to about 1/4 cup. Add the broth and the cherries and simmer the sauce on medium until thickened, about 10 minutes. Stir in the lime juice and salt and pepper to taste, and keep the sauce warm, covered. 2. Serve on tenderloin |
