This salsa works very well with halibut, salmon, and most any other type of fish. Ingredients:
3 cups sweet, pitted cherries |
1/4 cup finely diced red bell pepper |
1/4 cup finely diced yellow bell pepper |
12 cup finely diced red onion |
2 tablespoons honey |
2 tablespoons lime juice |
1 clove minced garlic |
1 serrano chili, seeded and minced |
1 teaspoon grated lime zest |
pinch of salt |
Directions:
1. Chop 2 3/4 cups of the cherries. Place the remaining 1/4 cup cherries in a blender with 1/4 cup water and puree. In a large bowl, mix the puree with remaining ingredients. Cover and refrigerate for 20-30 minutes, to allow flavors to combine. |
