This is a recipe that I got from a friend, but I changed a few things. I get frozen cherries at Trader Joe's, and they're perfect in these muffins-fresh are delicious, but so expensive, and I'd rather eat those right out of the bowl. Read more . This may seem like a lot of ingredients, but they're really easy to make, and SO good. Ingredients:
2 cup flour |
1 cup whole wheat flour |
3/4 tsp salt |
2 1/4 tsp baking powder |
3/16 tsp baking soda |
1/4 cup brown sugar |
3/4 cup sugar |
1 1/2 cup ricotta cheese |
1 1/2 cup buttermilk |
3 eggs |
1 1/2 tbs lemon juice |
1 tbs vanilla |
1 tbs almond extract |
4 tbs butter -- melted; or canola oil |
2 1/4 cup cherries -- not defrosted if frozen; pitted and sliced; or 1 cup dried cherries |
Directions:
1. Heat oven to 350. 2. Spray 12 muffin cups. 3. Combine flour through sugar. 4. Beat buttermilk into ricotta in separate bowl, add eggs, whisking in one at a time. 5. Beat in lemon juice, vanilla and almond extracts. 6. Pour with butter and cherries into flour, fold in just until moistened. 7. Scoop into muffin cups. 8. Bake until tester is clean, 20-25 mins. 9. Cool on rack. |
