Pineapple pies are rare when they aren't cream pies. THere is a reason for it; pineapple pie isn't the first choice as a fruit filling. Pineapple is difficult to work with. But when this is served the people will notice, even if they don't immediately notice the novelty.
Ingredients:
1/3 c flour
1 c sugar
2 c sliced apples
1 c stoned sour cherries
1 c crushed pineapple
3 tbsp butter
pastry for a bottom and top of pie.
Directions:
1. Preheat oven to 425.
2. Line the bottom of the pie plate with pastry.
3. Blend the flour and sugar, and sprinkle the bottom of the crust with a heavy layer.
4. Alternate layers of fruit, in layers of apples, cherries, pineapples, from bottom to top.
5. Dot with butter, THEN cover with the pastry top.
6. Bake for 45 minutes.
