Delisious served warm or cold with ice cream or whipped cream. Ingredients:
3 1/2 cups pitted, frozen cherries, thawed and drained reserving juice |
1 (8 ounce) can crushed unsweetened pineapple, drained reserving juice |
1/3 cup water |
4 teaspoons cornstarch |
2 teaspoons honey |
1/2 teaspoon vanilla |
1 1/4 cups flour |
1 teaspoon baking soda |
1/4 teaspoon cinnamon |
1 teaspoon butter or 1 teaspoon margarine, melted |
2 teaspoons honey |
1/3 cup half-and-half |
1 egg |
whipped cream (optional) |
Directions:
1. Preheat oven to 375 degrees. 2. Lightly butter a 8x8x2 inch baking dish. 3. Combine cherry juice, pineapple juice and water in a jar with a tight fitting lid. 4. Add cornstarch and shake until well blended. 5. Pour into a med size saucepan. 6. Add cherries, pineapple and honey. 7. Cook over med heat until thick and bubbly. 8. Add vanilla. 9. Sift together flour, baking soda, and cinnamon. 10. Add butter, honey, half& half and egg. 11. Mix just until dry ingredients are moistened. 12. Pour cherry mixture into the prepared baking dish. 13. Place 6 even spoonfuls of dough over fruit. 14. Bake for about 25 minutes or until topping is slightly browned. 15. Serve topped with whipped cream. |
