This is a recipe i found on the web from Diane's Kitchen... I love fruit in cornmeal muffins... and this recipe will be easy for me to convert to Gluten free... Ingredients:
2 cups all-purpose flour |
2 cups cornmeal |
1/2 cup sugar |
4 teaspoons baking powder |
1/2 teaspoon salt |
1/2 cup chopped pecans -- toasted |
1/2 cup chopped dried cherries |
2 cups buttermilk |
2 eggs -- lightly beaten |
4 ounces (1 stick) butter -- melted/cooled |
Directions:
1. Preheat oven to 375 degrees. Spray miniature muffin pans with nonstick cookware spray. 2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, pecans and cherries. Set aside. In a small bowl, thoroughly combine the buttermilk and the eggs. Pour the buttermilk mixture and the melted butter into the flour mixture. Stir with a wooden spoon until thoroughly combined. Fill the muffin tins with batter to the rim of each cup. 3. Bake in the preheated oven for 20 to 22 minutes until the tops are lightly brown. |
