The recipe for this little treat was found in a Mar 2007 Favorite Brand Name Recipes cookbooklet, Whole-Grain Cooking. Preparation time does not include the time needed for the cherry mixture to cool & chill. Ingredients:
3/4 lb dark sweet cherry |
1/2 cup apple juice, unsweetened |
1/4 teaspoon ground cinnamon |
1 dash ground nutmeg |
1 teaspoon cornstarch |
1 tablespoon water |
1/3 cup cereal, natural wheat & barley nuggets, not flakes |
2 tablespoons toasted almonds, chopped |
2 cups non-fat vanilla yogurt |
Directions:
1. Remove stems & pits from cherries, then cut into halves (about 2 1/4 cups). 2. In a small saucepan combine cherries, apple juice, cinnamon & nutmeg, cooking & stirring over medium heat for 5 minutes or until cherries begin to soften. 3. In a small container combine cornstarch & water, stirring until smooth, then stir this mixture into the hot cherry mixture. 4. Turn heat up to high & continue cooking & stirring until mixture boils & thickens slightly. 5. Remove from heat, let cool for 10 minutes, then cover & refrigerate until chilled. 6. After cherry mixture has chilled, in a small cup combine.cereal & almonds. 7. In 4 10-ounce wine or parfait glasses, equally divide & layer half the cherry mixture, then half the yogurt & half the cereal mixture. Repeat the layers & serve! |
