Born in the 1960s, this refrigerator pie immediately became a national favorite with cooks because it was so simple and delicious, sort of a cross between cheesecake and key lime pie. But no baking required. Ingredients:
6 ounces graham cracker crust (8 or 9 inch diameter) |
1 (8 ounce) package cream cheese, softened |
1 (14 ounce) can sweetened condensed milk |
1/3 cup lemon juice (i add aliitle more, but i like tart) |
1 teaspoon vanilla extract |
1 (21 ounce) can cherry pie filling, chilled |
Directions:
1. With mixer; beat cheese until fluffy. 2. Gradually beat in sweetened condensed milk until smooth. 3. Stir in lemon juice and vanilla Pour into crust. 4. Chill at least 4 hours or more. 5. Spoon pie filling on top and serve. 6. Refrigerate leftovers. |
