A 1930's recipe from Mom's Kansas cookbook I checked other cakes of this type from this book and have made a note about the salt, according to other recipes, it should be about a tsp. Ingredients:
1/2 cup shortening |
1 cup sugar |
1/2 cup milk |
2 cups of cake flour |
2 1/2 tsp baking powder |
2 1/2 tsp salt (ok, this seems like about 1 1/2 tsps too much) |
1/2 c chopped nuts |
1/2 c maraschino cherries, cut fine |
1 tsp vanilla |
4 tbl cherry juice |
3 egg whites, beaten stiff |
Directions:
1. Cream shortening and sugar until fluffy 2. Add milk alternately with the sifted dry ingredients 3. Add the nuts, cherries, vanilla and cherry juice 4. Fold in egg whites 5. Bake in a greased 10 tube pan for 45 to 60 minutes |
