Was a guinea pig for my neighbor Mrs. Mary. My reward was this recipe and many others for everyone she compiled. Ingredients:
1 (9 inch) pie crusts |
1 (12 ounce) can cherry pie filling |
1 egg |
2/3 cup evaporated milk |
1/2 cup sugar |
1/4 cup flour |
1/4 teaspoon salt |
1/2 teaspoon vanilla extract |
1 teaspoon almond extract |
1 1/4 cups shredded coconut |
Directions:
1. Pour pie filling in unbaked pie shell. 2. Beat together egg and evaporated milk. 3. Add sugar, flour, salt, almond, and vanilla extract, beat until smooth. 4. Stir in coconut. 5. Pour over pie filling. 6. Bake at 375, 40-45 minutes until puffed and light brown. 7. Cool before serving. |
