This coffee cake is simple to make and very attractive when finished Ingredients:
1 yellow cake mix |
1/2 cup (1 stick) cold butter cut into small pieces |
1/2 cup buttermilk |
1 egg |
1 tsp. vanilla |
1 tbl. grated lemon peel |
1/2 cup dried cherries or cherry flavored dried cranberries |
1 tbl. sugar |
1/4 cup almond slivers |
Directions:
1. Preheat oven to 350 degrees. Spray a 9 springform pan with non-stick spray. Pour cake mix into a large bowl. Using your fingers, work butter into the mix until well blended and there are no lumps. Stir in buttermilk, egg, vanilla and lemon peel. Stir in cherries. Spoon into pan. Moisten your hands and pat out evenly. Sprinkle with sugar and then almonds. Bake 25-30 minutes or until a toothpick inserted into the center comes out clean and the crust is golden brown. Remove from oven and let cool in the pan for 10 minutes. Remove sides. This can be served warm or cold. |
