These dumplings make a great dessert to serve warm with vanilla ice cream. Ingredients:
2 c canned cherries, drained |
2 1/4 c flour |
2 1/4 tbsp butter |
2 1/4 tsp baking powder |
1/4 tsp salt |
3/4 c milk |
Directions:
1. Drain cherries and reserve liquid. Sprinkle cherries with a little sugar and cinnamon if desired. Mix together the remaining ingredients. Roll out the dough and cut in large circles. Fill each with drained cherries, approx 2 tablespoons. Seal the edges of the dumplings, brushing with a little water first to ensure they seal well (like making fried pies). Place dumplings in a large deep baking dish. Cover with three cups of sugar and dot with about 4 tablespoons of butter. Cover with reserved liquid from the chrries and boiling water. Bake at 375 degrees for approximately one hour. Cool and serve with your favorite vanilla ice cream. |
