Very moist cupcakes. I do not use any icing with these. i have adapted this recipe from another one after watching CupCake wars on TV. Not sure how this would be judged on the show. You can try it yourself and see how you would rate it. Ingredients:
1/2 cup butter |
1 cup brown sugar |
1/2 cup white sugar |
2 cups unbleached white flour |
1 cup buttermilk |
1 large egg |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon almond extract |
1 (15 ounce) can sour cherries (well drained) |
Directions:
1. cream butter and sugars, add egg beat till blended. 2. mix together flour soda and baking powder. alternate flour mixture with buttermilk into the butter sugar mixture. After this is well mixed, drain cherries and blend into the batter. add almond extract. 3. Use cup cake pan with liners, Fill each with aprox 2 TBS batter, Bake for 20 min at 350. They are done when a toothpick comes out clean. |
