Wonderful dessert packed with fresh sweet cherries. Just the right amount of sweetness with a yummy crunchy topping. I took this out of the oven and went into another room. When I came back, my picky 8 year-old had eaten more than half! All I had was salted butter, so I omitted the salt in the filling and topping. Ingredients:
6 cups sweet cherries, pitted (about 2 pounds) |
1/3 cup sugar |
1/4 cup cornstarch |
1 tablespoon fresh lemon juice |
1/4 teaspoon almond extract |
1/8 teaspoon salt |
1/2 cup flour |
1/2 cup old fashioned oats |
1/2 cup packed light brown sugar |
1/8 teaspoon salt |
6 tablespoons chilled butter, cut into small pieces |
1/3 cup sliced almonds |
Directions:
1. Combine ingredients for filling in a large bowl. Spoon into an 11x7 baking dish that has been sprayed with cooking spray. 2. Combine flour, oats, brown sugar, and salt in a medium bowl. Cut in butter with a pastry blender or two knives until mixture resembles coarse meal. Stir in almonds. Sprinkle evenly over cherry mixture. 3. Bake at 375 degrees for 45 minutes or until filling is bubbly and topping is crisp. Let stand 5 minutes. Serve warm. |
