Cherry Creme Brulee Custard

Our aunt had a cherry tree in her yard.. a big one. We found all ways to use them up. This is a custard that she came up with. Bake 2-3 hours..
Ingredients:
2 1/2 cups half and half. my aunt uses heavy cream... she is skinny
6 egg yolks
2 whole eggs
1 t. vanilla extract
1 cup granulated sugar
3/4 cup pureed michigan cherries
3 t. brown sugar
Directions:
1. Heat cream to a scald.
2. Mix together egg yolks, whole eggs, vanilla and sugar in a large bowl.
3. Add cherries.
4. Slowly pour in scalded half and half or cream to egg and sugar mix, stir, stir, stir. This is a must!
5. Pour this mix into 4 well-greased ramekins or oven proof dishes.
6. Place the dishes in a large cake pan filled half-way with water. It is easier to fill pan with water in oven.. just don't splash into custards.
7. Bake, uncovered, in a 300 degree oven until set, or about 2 to 3 hours.
8. Remove from oven and let cool in the pan.
9. To serve, place a tablespoon of brown sugar on top of each custard and torch to caramelize.You can put them in a 500 degree broiler, close to the heating element, browned. The torch is much easier.
10. Remember the slower you cook your custards the better. If it is too hot, the resulting custard will look curdled. I have used white sugar on top and it was good too.
11. This takes time but really good.
