Filled with chocolate chips, hazelnuts and maraschino cherries, this heavenly quick bread is a sweet way to end holiday meals. Your guests will love it as an alternative to traditional fruitcake. Ingredients:
2-1/2 cups king arthur unbleached all-purpose flour |
1/2 cup sugar |
1/2 cup packed brown sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 egg |
1-1/4 cups evaporated milk |
3 tablespoons canola oil |
1 teaspoon vanilla extract |
1/2 cup dark chocolate chips |
1/2 cup hazelnuts, coarsely chopped |
1/2 cup coarsely chopped maraschino cherries |
Directions:
1. In a large bowl, combine the flour, sugars, baking powder, baking soda and salt. In a small bowl, whisk the egg, milk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the chocolate chips, nuts and cherries. 2. Transfer to a greased 9-in. x 5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (16 slices). |
