These are awesome! I like to make them even without the fruit filling. Ingredients:
muffin mix |
1 box moist white cake mix |
8 ounces cream cheese softened |
1/2 cup sour cream |
2 eggs |
2 cups crushed graham crackers |
6 tablespoons melted butter |
1/4 cup sugar |
1/2 cup sugar |
fruit filling |
1/4 cherry preservatives |
cheese filling |
8 ounces cream cheese softened |
1 egg |
1/2 teaspoon freshly squeezed lemon juice |
Directions:
1. Preheat oven to 350 2. Lightly grease muffin pan 3. Batter: In a large bowl mix cake mix, cream cheese, sour cream, eggs, 1/4 cup sugar. Beat on med. For 3 mins. 4. Crust: Combined graham crackers 1/2 cup sugar and melted butter in small bowl. 5. Filling: Beat together all ingredients until smooth. 6. Divide half of the graham mixture among the 12 muffin cups. Lightly press into bottom. Fill cups all the way with the batter. Place 1 tsp. Preserves on top. Gently Cut into batter. 7. With the back of a spoon dipped in water to prevent sticking make indent in batter. Put a dollop of cream cheese misture over the top of the muffin sprinkle remaining graham on top. 8. Bake for 25 to 30 mins. Let cool 10 mins. |
