A really decadent sounding recipe from The Cake Mix Bible. Mmmmmm cheesecake! Ingredients:
1 (18 1/4 ounce) package duncan hines moist deluxe devil's food cake mix (or the classic yellow cake mix) |
1/4 cup margarine or 1/4 cup butter, melted |
2 (8 ounce) packages cream cheese, softened |
3 eggs |
3/4 cup sugar |
1 teaspoon vanilla extract |
1 1/2 cups sour cream |
1/4 cup sugar |
1 (21 ounce) can cherry pie filling (or whatever is your fave flavor) |
Directions:
1. Preheat oven to 350 degrees, and place foil or paper liners in 24 (2 1/2 inch) muffin cups. 2. For Crust:. 3. Combine cake mix and melted margarine in a large bowl. 4. Beat at low speed with electric mixer for 1 minute. Mixture will be crumbly. 5. Divide mixture evenly among the muffins cups; level them, but do not press down. 6. For Cheese Filling:. 7. Combine cream cheese, eggs, 3/4 cup sugar, and vanilla extract in medium bowl. 8. Beat at medium speed with electric mixer, until smooth. 9. Spoon evenly into muffin cups, and bake for 20 minutes, or until set. 10. For Topping:. 11. Combine sour cream and 1/4 cup sugar in a small bowl. 12. Spoon evenly over cheesecakes and return to oven for 5 minutes. 13. Cool completely then garnish each cheesecake with cherry pie filling. 14. Refrigerate until ready to serve. |
