A wonderful Cake. Great for desert or with coffee.
Ingredients:
3/4 cup butter
1 tablespoon grated lemon rind
2 cup sugar
4 cups cake flour
4 eggs
2 cups glace cherries
Directions:
1. Cream together the butter or margarine and the grated lemon rind until soft.
2. add the sugar and beat until light and fluffy. (about 5 minutes)
3. Sift the flour and add a little of it to the mixture. Alternately add the remaining flour and the eggs to the mixture beating well after each addition.
4. Cut the cherries in half and toss in flour. Add to the cake mixture and mix well.
5. Butter and flour an Bundt cake pan.
6. Pour cake mixture into the prepared pan and bake in 325 degree oven for approx. 1 1/2 hour. Leave the cake in pan until almost cool.
