I clipped this out of a magazine back in the 80's...It won 4th price in a contest and its absolutely delicious... Its beautiful for Christmas Ingredients:
crust |
1 1/2 cups finely crushed chocolate wafers (30 wafers) |
6 tablespoons butter, melted |
pie |
1 jar marshmallow cream (7 oz) |
1/3 cup cherry brandy |
2 tablespoons chopped maraschino cherries |
2 1/2 cups whipping cream |
1 tablespoon maraschino cherry juice |
6 whole maraschino cherries |
Directions:
1. Crust: 2. Combine crushed wafers and butter. 3. Press mixture firmly onton bottom and up sides of a 9 inch pie plate. 4. Pie: 5. Combine marshmellow creme and brandy; beat smooth with hand mixer. 6. Fold in chopped cherries. 7. Beat 2 cups of the whipping cream to soft peaks; fold into marshmellow mixture. 8. Turn into crust. 9. Whip remaining cream and cherry juice; using pastry tube and tip, pipe atop pie in center of pie. 10. Garnish with whole cherries. 11. Feeze overnight. 12. Serve directly from freezer. |
