A clafouti is a French dessert consisting of fruit baked in one of two batters. It may be baked in a custardy batter or in a more cakelike batter. This dessert is baked in a cakelike batter. I have not yet made this recipe, but I feel sure it will be a keeper. I wish I could remember the source of this recipe, but it's seems definitely to be of European origin, wouldn't you say?. Ingredients:
1 3/4 ounces flour |
1 pinch salt |
1 3/4 ounces sugar |
3 eggs |
1/2 pint milk (1 cup) |
1 tablespoon cherry brandy or 1 tablespoon vanilla |
1 ounce melted butter |
1 lb ripe black cherries |
butter |
confectioners' sugar |
whipped cream |
Directions:
1. Preheat oven to 400 degrees F. 2. Combine flour and salt; sieve into a bowl. 3. Beat the eggs and blend in gradually. 4. Warm the milk and slowly add, beating vigorously. 5. Stir in the cherry brandy or vanilla; blend in the melted butter. 6. Stone cherries, removing the pits. Grease a 1 pint (2 cup) ovenproof porcelain baking dish. Spread cherries over bottom and carefully pour the batter over all. Dot with a few tiny pieces of buttter. 7. Bake in preheated oven for 20 minutes. Reduce heat to 375 degrees F. and bake 20 more minutes. 8. To serve: Dredge the cake with sieved confectioners' sugar. Top with a dollop of whipped cream. Cake is best served warm. |
