Fresh cherries, baked to perfection in this batter with a meringue-like topping. Serve it with thick whipping cream with a hint of brandy in it (chantilly style). Ingredients:
5 oz plain flour |
pinch of salt |
3 medium eggs, separated |
7 oz milk |
1/2 oz butter |
1 1/2 lb cherries |
caster (berry) sugar to taste |
pinch of cinnamon |
Directions:
1. Sift flour and salt into large bowl; make a well. Beat a little milk into the egg yolks then pour into the well. Blend with the flour, gradually adding the remaining milk until batter is smooth and thick. Let batter rest 1 hour. 2. Preheat oven to 400F/200C and liberally butter a deep 9 in flan dish. Wash, stem and pit the cherries. Toss in lemon juice, adding caster sugar and cinnamon to taste. Arrange cherries in the flan dish. Whisk egg whites until they form soft peaks, then folk into the flour batter. Pour over the cherries and bake 40-45 minutes until well risen and golden. Serve immediately, sprinkled with caster sugar. |
