This is pretty good! Ingredients:
1 jar (10 oz) maraschino cherries |
1 3/4 cups all-purpose flour |
2 tsp baking powder |
1/2 tsp salt |
2/3 cup firmly packed brown sugar |
1/3 cup butter or margarine, softened |
2 eggs |
1 cup mashed ripe bananas |
1/2 cup chopped macadamia nuts or walnuts (i used chopped pecans) |
Directions:
1. Drain maraschino cherries, reserving 2 T juice. Cut cherries into quarters. 2. Combine flour, baking powder and salt; set aside. 3. Combine sugar, butter, eggs and reserved cherry juice in large bowl. Beat with electric mixer at medium speed 3-4 minutes or until well mixed. 4. Add flour mixture and mashed bananas alternately, beginning and ending with flour mixture. 5. Stir in drained cherries and nuts. 6. Lightly spray 9x5x3-inch loaf pan with nonstick cooking spray. Spread batter evenly in pan. 7. Bake in preheated 350F oven 1 hour or until wooden pick inserted near center comes out clean. 8. Remove from pan; let cool on wire rack. 9. To store, wrap bread in plastic wrap. |
