I like meatloaf because it is easy to make, and allows you to add things to enhance flavor and stretch your pound of ground beef. Also, if you are missing an ingredient, you can play around with something else and it usually works out alright. I started looking at alternatives to some of the standard ingredients (i.e. bread crumbs), and thought that a taco style meatloaf would be a hit. When making this dish, feel free to experiment. If you like it really hot, add some green chilies! Ingredients:
1 large egg |
1 1/2 cups tortilla chips |
1 1/2 cups taco blend cheese |
1/2 cup fresh cilantro |
1 (1 1/4 ounce) packet taco seasoning (any brand) |
1 lb ground beef |
1 (8 ounce) can diced tomatoes (with or without chilies) |
taco sauce (mild, medium or hot) |
Directions:
1. Preheat oven to 375 degrees F. 2. Place any style tortilla chips in a plastic bag and crush with rolling pin, can, meat tenderizer or other object. Keep crushing until you have about 11/2 cups of crushed chips. 3. Combine egg, tortilla chips, taco cheese, cilantro, taco seasoning and diced tomatoes. Add ground beef and pork and mix thoroughly. Turn into a loaf pan. Bake uncovered for 1 hour and 15 minutes. During the last 15 minutes, cover the top of the loaf with taco sauce. Let rest 10-15 minutes before serving. 4. If desired, have shredded lettuce, sour cream, and/or guacamole available for topping. |
