Makes a lot so you might want to halve it. Ingredients:
7 tomatoes,cut in 1/4 dice |
1 large red onion,cut in 1/4 dice |
2 c fresh chopped cilantro |
2 jalapeno peppers,seeded and minced |
2 tbs salt |
1 tbs gr. black pepper |
1 tbs minced garlic |
2 tbs lime juice |
1/2 c distilled white vinegar |
1/2 c vegetable oil (i halve this) |
Directions:
1. Place tomatoes,red onion,cilantro, jalapeno peppers,salt,black pepper,garlic,and lime juice into large mixing bowl. Pour in the vinegar and vegetable oil and gently mix to combine. Cover and refrigerate 1 hour before serving. |
