I saw this made on our local tv station by Chef Andrew who suggested using fruits in season while we have them. My 7 year old and I have been making this all summer and it disappears within a day of making it. It is pretty tart so those with a sweet tooth may want to add a little sugar. For those who use frozen fruits, add a little more cornstarch. Ingredients:
1/2 cup flour |
1/4 teaspoon baking soda |
1 pinch salt |
8 tablespoons unsalted butter |
1/2 cup sugar |
1 large egg yolk |
1/4 teaspoon vanilla extract |
3/4 cup strawberry |
3/4 cup blueberries |
3/4 cup raspberries |
3/4 cup blackberry |
3/4 cup rhubarb |
1 tablespoon cornstarch |
1/2 cup sugar |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 375. 2. Gently combine (so you don't smash the fruit) all fruit. 3. filling ingredients and set aside. 4. Combine baking soda, salt and flour. 5. Cream together. 6. butter and sugar until light and fluffy. 7. Beat in egg. 8. yolk and vanilla. 9. Add dry ingredients with a spatula. 10. Place fruit filling in an 8 inch non-metallic baking pan. 11. Evenly distribute tablespoon sized clumps of cobbler. 12. across the fruit. 13. Bake 40 minutes or until crisped and bubbling. 14. Let cool. 15. a bit but serve warm. 16. Great with ice cream. |
