This is a recipe from my mom. It's one of my favorite chili recipes without the meat. A perfect dish for a cool fall/winters eveing! I hope you all enjoy. Ingredients:
2 garlic cloves, minced |
1 green pepper, chopped |
1/2 lb mushrooms, sliced |
2 tbsp. oil |
1 can(28oz.) crushed tomatoes |
1 15 oz. can tomato sauce |
1 tbsp chili powder |
1 tsp. cumin |
2 15 oz. cans kidney beans, drained |
1 1/2 cup diced zucchini |
1 10 0z. pkg corn, thawed |
1 cup sharp cheddar cheese, shredded |
Directions:
1. In a large saucepan put garlic, green pepper, mushrooms and oil. 2. Cook for 5 minutes. 3. Add and bring to boil the following... 4. tomatoes, tomato sauce, chilil powder and cumin. 5. Add and simmer 15 minutes the following... 6. beans, zucchini, corn 7. Add cheese right before serving. Stir in until melted. 8. Can add more cheese to top of each bowl as served. My kids like to put a tsp. of sourcream on top too! |
