I tried this dish at a dinner for our American Legion Post 154. The recipe came from Carol Wacenske’s . I thought these were so yummy. Ingredients:
6 3/4 teaspoons butter |
6 3/4 teaspoons all-purpose flour |
3/8 teaspoon salt |
1/8 teaspoon white pepper |
2 1/4 cups milk |
1 1/8 cups cubed process cheese (recommendedtops cheezy melt or velveeta) |
32 ounces frozen peas, thawed (2 packages - 16oz each) |
1 cup finely crushed wheat crackers |
2 tablespoons grated parmesan cheese |
2 tablespoons butter, melted |
Directions:
1. Sauce– In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add cheese; stir until melted. Stir in peas; cook 1 – 2 minutes longer or until heated through. 2. Topping– Toss together crackers, Parmesan cheese and butter. 3. Spread Peas with Cheese Sauce into a 9x13x2 dish. Add crumb topping over mixture. |
