I've been trying to find a good baked cheesecake recipe that will fit into our vegan diet. Easy to mix and gets better the longer you let it sit. The flavors really seem to be best the next day.
Ingredients:
2 (12 ounce) packages firm tofu
1 teaspoon vanilla
1 teaspoon ener-g egg substitute, add powder to bowl
2 -3 tablespoons lemon juice
1/2 cup brown sugar, add more to taste
1 prepared graham cracker crust
Directions:
1. Place all ingredients in food processor and blend until smooth. (I used 1 box of Mori-Nu Firm Lite and 1 container regular firm water packed tofu.).
2. Pour into crust and bake in a 350degree oven for 30-45 minutes. It will be done when top starts to form a crack.
3. Take out and cool. Once cool, place in refrigerator and chill - it will be best the longer you wait.
