Cheesy Zucchini Sausage Soup |

CHEESY, CREAMY and GOOD!! A hearty soup for a good comfort food meal! Great with cornbread or a salad. Ingredients:
1 lb sausage |
1 onion, chopped |
1 carrot, chopped small |
2 zucchini, chopped small |
2 potatoes, small cubes |
2 (14 ounce) cans chicken broth |
2 (12 ounce) cans evaporated milk |
2 cups cheddar cheese, shredded |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. In a saucepan brown sausage and onion. Crumble sausage. Drain and place sausage and onion into a large dutch oven. 2. Add chicken broth and zucchini, carrots, potatoes. Add salt and pepper. Bring to a boil and then turn heat to simmer. Simmer slowly for 20 to 25 minutes. 3. Add evaporated milk and cheese. Slowly stir until cheese is melted. 4. Serve and enjoy! |
