Yummy soup that can be changed up depending on what veggies you prefer. Ingredients:
1 tbsp butter |
1 cup onion, chopped |
1 cup celery, chopped |
1/2 cup carrots, chopped |
1 tbsp garlic, minced |
32 oz vegetable broth |
14 1/2 oz creamed corn |
3 cups potatoes, cubed |
10 oz frozen broccoli |
1 tsp salt |
1 tsp black pepper |
16 oz velveeta, cubed |
Directions:
1. Melt butter in soup pan. Add onions, celery, carrots and cook until lightly browned. Add garlic and cook until fragrant. 2. Add veggie broth and bring to a boil. Add corn, potatoes, and broccoli. Return to a boil and reduce heat. Cook until veggies are tender. 3. Add velveeta, stirring gently until cheese is melted and soup is hot. 4. Add salt and pepper before serving. |
