Cheesy Stuffed Potato Skins |

I love potatoes as a side dish, and since we are always bbq'ing these are great! Ingredients:
5 baking potatoes |
3 tablespoons milk, heated |
2/3 cup cheddar cheese, shredded |
1/2 cup sour cream |
1/2 cup scallion |
2 slices turkey bacon, cooked and crumbled |
Directions:
1. Heat grill. Wrap each potato in foil. Grill for 45 minutes or until tender. 2. Quarter potatoes lengthwise, remove pulp leaving a 1/2 border. 3. In a bowl, blend potato pulp, milk and 1/2 the cheese and pipe it into the skins and top with the remaining cheese. 4. Grill skins for 2 minutes, or until heated. Top with remaining ingredients. |
