My friend Maria made this for a casual Friday night gathering and served it with crackers and beer. Wilted spinach with cheddar and cream cheeses make this hearty, warm dip perfect for chilly fall and winter nights. It would also taste great on toast points or sliced french bread. Ingredients:
2 -3 tablespoons butter |
1/2 medium onion, chopped finely |
1 lb fresh spinach leaves |
2 cups shredded cheddar cheese |
8 ounces cream cheese, cubed |
2 tablespoons heavy cream |
1/2 cup chopped pecans |
Directions:
1. Saute onion in butter until carmelized. Add spinach and wilt for a few mintues. Add cream cheese, cheddar cheese, and cream. Stir until melted and blended together. Place cheese mixture in an oven-safe casserole dish (6 x 9). Top with pecans. Bake in 350 degree oven until browned on top and pecans toasted. Serve immediately. |
